Davide Berlenghini has grown up as a chef between his grandma’s apron and several Roman dishes cooked by his father. Davide started his way up the ladder very young, working for some historic trattorias in the center of Rome, then he moved on to the seaside restaurants to support his undying love for the sea. When he was 23 years old he left Italy for a series of educational trips around Europe, for nearly 10 years.
His idea of gastronomy hinges on controlled production and the rejection of mass philosophies that the market requires to many companies, so ethically following the Bonini Balsamic philosophy.
