The young chef Fabio Ciervo arrived at the restaurant “La Terrazza dell’Eden” after having work alongside Michel Roux at the “Waterside Inn”, one of the temples of British cuisine, famous for having 3 Michelin stars for 25 consecutive years.
Ciervo’s curriculum holds international experience; after having studied and worked at the principle institutions of Haute Cuisine of the world, like the L’Ecole Lenotre, a noted school of French cuisine, he continued onto the restaurant at Grosvenor House in London, Ristorante Cracco in Milan ( 2 Michelin stars) and the 3 Michelin star restaurant Martin Bersategui in Spain.
In 2007 Fabio began his experience with Michel Roux at the famous “Waterside Inn” as a sous-chef. Here he was able to refine his talent and professionalism, working with one of the most demanding chefs in the world. During his career, Fabio has developed his personal philosophy regarding the culinary arts: according to him, the “Haute Cuisine” should take a bit of inspiration from all cultures. In his kitchen, the virtue of the Italian cuisine is seen through a use of spices and the light cooking of the Orient. France taught him the marvelous art of sauces, Sapin gave him the vision of interest and futuristic innovation.
Thanks to these experiences from the world Fabio was able to unite his passion with his professionalism, creating an actual culinary philosophy , which the clients of “Ristorante La Terrazza” can take part in every day.
In November 2012, Fabio received his first Michelin Star as Executive Chef of the Restaurant “La Terrazza” dell’Hotel Eden in Rome.
